Aside from being one of my nicknames for Wylie, "peaches and cream" was always one of my favorite instant oatmeal choices growing up. With peaches in season now it seemed the perfect time to make our own version for breakfast using almond milk.
The secret to making the perfect bowl of microwave oatmeal is to cook it with milk instead of water, it puffs and softens the oats. Here's how we did it...
Quick Peaches and Cream Oatmeal
1/2 cup quick oats
1 tsp brown sugar
1/2 tsp cinnamon
A pinch of sea salt
1 peach, cut into bits
1 cup almond milk
Layer ingredients in list order into a microwave safe bowl, cover with a paper towel and cook on high for 2 minutes. Careful the bowl will be hot! Allow to cool for a minute and serve.
